How to Make Feijoa Jam
Feijoas Feijoas come from Brazil's highlands evergreen plants and make delicious jam. This is a simple recipe. Enjoy with toast, crumpets and scones.
Ingredients
600g / 1.3lb feijoas, peeled (skins retained) and finely sliced
1/2 cup feijoa skin liquid (boiled from skins)
2 cups white granulated sugar (or preserving sugar)
Steps

Boil feijoa skins. Use enough water to just cover.

Strain and remove the skins from the liquid.

Pour half cup of liquid. Top up with boiling water if needed.

Pour the liquid into a heavy based saucepan and add sliced feijoas.

Cook over low heat until tender.

Add sugar and boil quickly until the setting point is reached.

Leave jam to settle off the heat for 15 minutes once the setting point is reached. This is to prevent the fruit rising to the surface when poured into the jars.

Pour into a sterilised jam container.
Feijoa Jam
2 lbs feijoas, peeled and sliced, ? cup water, 1 lemon juice and zest, 4 cups warmed white sugar
Method:
Place feijoas, water, lemon juce and zest in a large stainless steel pot and bring to the boil, simmer and cook until fruit is soft, around 25 minutes.
Add warmed sugar and stir until it dissolves.
Bring jam to a rapid boil and boil without stirring until the mixture reaches the setting point, around 20 minutes.
Pour jam into hot sterilized jars and seal and process.
